Fine Rustic Dining
Living the life of a cowboy all day can work up a powerful hunger for your family. Back at headquarters, Chef Jordan Asher and his crew are cooking up fresh family-style delights with a lot of culinary flare added in for a fine rustic dining experience. All of our meals are carefully planned; bringing everyone together to share their day and a diverse selection of hearty American fare with world influence. Your meals include high quality local meat and produce. In many instances the meat is raised on the ranch. Our eggs are fresh from our chickens and The High Lonesome’s signature Black Angus beef graces our menu when the timing and aging process is complete. Lambs and hogs are raised and delivered by neighboring 4H and FFA kids.
The High Lonesome Ranch’s gardens and orchard enjoy ideal conditions for growing apricots, apples, peaches, pears and plums. We also grow an abundance of vegetables like corn, peppers, lettuces, cucumbers, squash, beans, peas, carrots, radishes, pumpkins and onions.
Jordan Asher, Executive Chef
Jordan Asher received his BA in Culinary Arts but his experience in the kitchen tells the real story. Just out of school, he took a position at Houston’s prestigious Briar Club and later launched his own catering company. Opportunity soon knocked again and Asher found himself in the kitchen of Charles Clarks’ (of Iron Chef fame) IBEZA, where he became a Sous Chef and Wine Steward.
Beyond making unique and palate pleasing dishes, Asher maintains the ranch’s garden, and beef curing and aging processes. He not only creates the food, he has a hand in the creation of the main ingredients. According to Asher, his key to cooking is as simple as his ingredients. “If you experiment with combination, which is the root of fusion, you will find amazing flavors that you never thought existed,” says Asher. “I like to break traditions and mix European with Southwestern ingredients and tastes. I mix hot with cold, dense with airy, crispy with chewy, and spicy with refreshing. The end result is an appetizer, entrée, or dessert that absolutely bursts with flavor and taste. I prefer not to discuss the meal in advance,” he said. “I’d rather review the ingredients after my guests have had the experience. Then they can truly appreciate the intensity of the diversity.”
When he is not experimenting in the kitchen, you can find Jordan Asher hiking, mountain biking, fly-fishing, or shooting with his camera.
Linda Sue Doden has been a staple at The High Lonesome Ranch for the past 14 years. Aunt Linda and her staff serve scrumptious blueberry pancakes, homemade muffins, organic granola, breads and pastries, all made from scratch. She has a cultish following that brings people back to the ranch time and again. Her Louisiana roots and a very special teacher, to whom she says she owes it all – her mother-in-law, inspired her strong southern influences.
